Matcha and Blueberry Smoothie
Struggling to drink matcha everyday? Adding it to a delicious smoothie such as this is the way to go! Because of the blueberries, zucchini and matcha green tea, this smoothie is packed full with antioxidants and other important vitamins and minerals needed to get you through the day.
Matcha and Blueberry Smoothie
Ingredients:
- Matcha Smoothie:
- ½ tin Coconut milk
- ½ cup Greek yoghurt
- ½ tsp Just Matcha powder
- ½ cup Chopped zucchini, frozen
- ½ tsp Macadamia nut butter
- 1 tbs collagen powder (optional)
- honey to your taste
- Blueberry Syrup:
- ¼ cup Blueberries, slightly crushed
- 2 tsp erythritol
- squeeze of lemon juice
Directions:
- Blueberry Syrup:
- Add all the ingredients,except for the lemon juice, to a pan and cook on low heat until the erythritol is dissolved.
- Increase to medium heat and bring to a gentle boil stirring often, until the syrup starts to thicken.
- Mix in the lemon juice.
- Allow to cool.
- Matcha Smoothie:
- Add all the ingredients to a high speed blender (OmniBlend is amazing) and blend until smooth.
- Pour into a glass.
- Drizzle the blueberry syrup on top. It may sink to the bottom, so just give it a gentle stir (we discovered this the hard way, hence it's invisibility in the photos).
